Sausage & Tomato Summer Salad

Some nights, easy cooking (and I mean incredibly easy), is the only thing I can muster up the energy to cook.  Here is one of the easiest recipes out there and perfect for summer!



4 – 5 chicken chorizo sausages (look for no additives, all-natural, organic if possible)

1 1/2 pounds fresh cherry tomatoes, halved

1 can hearts of palm, drained

3 tablespoons cup extra-virgin olive oil

Juice of ½ lemon

Fresh, chopped parsley

Salt & Pepper, to taste


Grill the sausage either on a grill or inside on a grill pan until cooked (or heated, if using pre-cooked) through.  Combine tomatoes and hearts of palm in bowl.  After cooling slightly, cut the sausages and add to bowl. Dress with olive oil, lemon juice, parsley, salt, and pepper.  Toss and enjoy!
